

History of Salmon
The Salmon Champagne House, located in Chaumuzy, is a family-owned champagne house that has been passed down through three generations. The Salmon family has a true passion for the Pinot Meunier grape variety, which makes up 85% of their 10 hectare estate. They have acquired unique expertise in working with this grape, which brings roundness and fruitiness to champagne.

BRUT

The 100% Meunier is a champagne which will please you by offering a purebred fruitiness, with a hint of escapism in an accessible and gourmet manner. We suggest an ideal tasting temperature between 9 and 14°C (59 and 86°F).
ROSÉ

Cépage: 100% Meunier (including 20% maceration rosé and 5% red wine from Meunier)
Dosage: 7g/L
The 100% Meunier Brut Rosé cuvée is an accessible and nicely fruity champagne, which lends itself to an encounter, exchange and sharing. We suggest an ideal tasting temperature between 48 and 57°F.
COTEAUX CHAMPENOIS BLANC “LES GREVES”

Cépage: 100% Meunier
The white Chaumuzy 2020 presents a deep, slightly frosted pink-gold color that is visually captivating. Its opulent and rich nose is unexpectedly powerful for a white wine, with woody notes taking center stage alongside fresh citrus zest, such as kumquat and pomelo. Over time, these notes will soften and meld, giving way to brioche, candied citrus fruits, and dried fruits.
The palate mirrors the nose, heightened by a pleasant acidity that imparts a refreshing quality to the wine. We recommend 2 to 3 years of aging to let the wine develop its full flavor profile, while its theoretical cellaring potential extends to 8 to 10 years, offering ample opportunity to enjoy its evolution.
COTEAUX CHAMPENOIS ROUGE “LE BOUXIN”

Cépage: 100% Meunier
The red Coteaux Champenois boasts a remarkable purple hue with deep violet reflections. On the nose, it offers the fruity promise of its color, with notes of blackcurrant berries, tart red fruits, and fresh citrus fruits. The palate is light and fruity, remaining true to the aroma, with low tannins and well-integrated spicy notes from the barrel.
The 2018 vintage is versatile and can be enjoyed now as an aperitif, or paired with grilled white meats and barbecue dishes. With a theoretical cellaring potential of 5 to 8 years, this wine has the capacity to age gracefully, providing even more enjoyment in the years to come
CHAMPAGNE SALMON RATAFIA

Cépage: 2/3 from fresh Meunier juice, 1/3 from Fine de Champagne
This wine displays a deep, dense and luminous colour of mahogany yellow with piercing copper pink reflections. The gradient of yellow colours attracts the eye and confers a rich and nuanced sensation to the ensemble.
The first nose reveals aromas of caramel, candied orange, Nepalese black pepper, fig and candied tangerines. Once aired, the ratafia rewards us with additional notes of sweet yellow plums, damsons calvados, apple turnover, candied apricot, rhum, walnut, honey, and nutmeg.
The approach on the palate is sweet and fresh with a syrupy sensation. The wine develops a suave fruity matter sustained by an orange-like acidity. The middle of the mouth is finely crafted, demonstrating ampleness and vinosity, as well as a fruity and spicy freshness, creating a subtle overall balance. The rich and concentrated finish remains pulpy and syrupy, yielding an ultimate sensation of candied citrus zests.
