

History of Hervieux-Dumez
Heirs to a unique know-how and a demand for quality passed down through 4 generations, Clément and Timothée are now committed to sublimating the assets and particularities of their terroir. The estate is certified HVE and VDC for its environmentally friendly practices and is the first estate in Champagne to be certified Bee Friendly, for the protection of bees. Their blends are the result of years of learning about the soils, and with each new bottling, of careful listening to what the wine expresses about the year and the conditions that made it mature.

Cépage: 50% Chardonnay, 30% Pinot Noir, 20% Meunier
Dosage: 7g/L
Terroir: 1er crus of Sacy and Chamery
Crafted only in years deemed excellent, this vintage, like the Club Trésor itself, is made according to the most demanding specifications in Champagne.
Produced from the three main Champagne grape varieties, it undergoes blind tasting carried out twice during the production process. A jury of expert oenologists selects the cuvées and demands exceptional quality.
Particular care is therefore devoted to this exceptional Champagne.
Presented in an original bottle that is exclusive to our quality circle, Club Trésors de Champagne, it is without doubt the jewel of the range.

Terroir: 1er crus of Sacy and Chamery
Made only during the years judged of the highest quality, this Club Trésors vintage is developed according to the most demanding specifications in Champagne.
Made from the 3 main grape varieties, this wine is subject to two separate blind tastings during the process of development. A jury of experienced oenologists selects the cuvées to be tasted and only those of exceptional quality are allowed to proceed. Special attention is therefore reserved for the production of this exceptional Champagne.
Presented in a special bottle, exclusive to members of the ‘Club Trésors de Champagne’, it is undoubtedly a wine of the highest quality, and ‘le floret’ from our range of champagnes.
LES GRAINS NOIRS

Cépage: 100% Pinot Noir
Dosage: 7g/L
Terroir: 1er crus de Sacy
This cuvee is made with a rigorous selection of the best Pinots Noirs from Sacy. Classified as a Premier Cru, this terroir is known for maturing some of the finest Pinots Noirs in Champagne. Our vines are located on clay-limestone soil. Grassed and plowed, they are cultivated according to the criteria imposed by Sustainable Viticulture in Champagne and the HVE label.
After various tastings and a precise selection of the finest grapes, the pressing is carried out with the greatest delicacy. Only the highest quality juices from the first press are kept. Our wines are then vinified and aged in thermo-regulated stainless steel vats. After the fermentation in the bottle, the aging is done on the lees in our 17th century vaulted cellars for an average of 3 years.
LES GRAINS BLANCS NATURE

Cépage: 100% Chardonnay
Dosage: 0 gr/Litre – Brut nature
Terroir: 1er crus de Sacy et Chamery
Our very best parcels of Chardonnay, « le château », are located just beneath the Château de Sacy, and at « Les blancs pignons » on the terroir of Chamery. These specific vines benefit from optimal sun exposure (south-east) which guarantees perfect ripening. The chalky soil imparts a delicate minerality to the grapes. All our plots are managed under sustainable viticulture.
With a total absence of dosage, it fully expresses its personality by highlighting the aromas of its terroir. This refined cuvée is characterised by its elegance and freshness, all set within a minerally background. Delicate aromas of fruit and white flowers make it a superb champagne aperitif. It perfectly accompanies a seafood platter (especially oysters), sushi or Carpaccio de St. Jacques.
ROSE BRUT “HILDE”

Blend: 50% Pinot noir – 10% Chardonnay – 25% Meunier – 15% Coteau Rouge Champenois
Terroir: 1er crus of Sacy, Chamery, Ecueil, Ville-Dommange
Dosage: 7gr/Liter
This Champagne rosé is a delicate blend of white and red wines from the Champagne region, made at the property and processed from our finest Pinots. The red wine is obtained after maceration of the skins, then assembled with the white wine in order to obtain a fresh and greedy assembly. On the nose, white flowers and redcurrant are mixed together. A wine of pleasure and conviviality, perfect from aperitif to dessert, its freshness and fruitiness will delight all your moments.
